Been thinking about making a hefeweizen with rose petals.
Anyone have experience brewing with any types of flowers or mild spices like this? I think ill split a 6 Gal. batch and use rose petal extract in one and real roses in the other.

www.beeradvocate.com/beer/profile/132/124449/This is what comes to mind of the rose I'm trying to get, don't know if you've had it. It was just a subtle rose water flavor The base beer was nothing special but it think they toned down a lot of the hef qualities to bring out the roses.

Will any rose work or do you have to have a special variety?
I want to do a Dandelion Mead this year (I'll open a different thread for it).

I would love to, we could bump up the grain bill so we can share it. Still just concerned about the secondary with the rose pedals or extract.

So we brewed this one on my system and fermented at my house. I split off 5 gallons and used rose petals from the the rose bushes next to the house. I let them sit in the secondary for a week. Racked over to a keg yesterday. I was very happy with the aroma I got from the rose petals and my gravity didn't drop anymore. Which is good, meaning I didn't get a wild strain of yeast from the petals.
